- 62.9 pounds of beef
- 47.8 pounds of pork
- .83 pounds of lamb and mutton (sheep)
- .41 pounds of veal (calf meat)
This is measured in “trimmed weight” and excludes bones, offal and viscera. Those are fancy words for all the leftovers, such as entrails (organs, gut and intestinal matter). Yes, some people love to dive into a steaming plate of snouts and tails, gizzards and hearts.
